Quail eggs are finished in tamarind sauce with salt, pepper, and lime leaf.
The day begins at 8 AM.
Service runs into the night.
“Eggs outside aren’t clean enough, so I make them myself.”
Around 1,000 duck eggs and 1,000 quail eggs move through each day.
