Carbon steel improves through seasoning and regular cooking. How the surface is prepared determines where that process begins.

H Cookware carbon steel is heat treated to create a stable dark surface with improved initial resistance to rust and a reliable foundation for seasoning. Food-grade oil is then applied and baked onto the pan through multiple heating cycles to establish its initial seasoning. After washing away the shipping protection, the pan is ready to cook with.

Why the Heat Treatment Matters

Untreated carbon steel begins with a silver surface that can change through blue, brown, and black as it is heated and seasoned. Conventionally blued carbon steel starts darker but may still change significantly during early use.

H Cookware carbon steel is heat treated at controlled temperatures to create a stable black surface before the factory seasoning is applied. During normal early use, the surface stays largely black, without the dramatic color swings that come with untreated or conventionally blued carbon steel.

That's the point of the treatment: it removes most of the usual seasoning learning curve, and the frustration of watching the color shift unpredictably while you figure out what's normal. Instead, you can focus on cooking and let seasoning build as you go.

More noticeable patina and color variation can develop if seasoning is worn away, stripped by acidic ingredients, or removed during cleaning. Newly rebuilt seasoning may look different at first before darkening with continued use — that's part of how the surface works, not a flaw.

Ready to Cook

Each pan gets a final coating of food-safe beeswax and oil for protection during storage and shipping. Before first use, wash it with warm water, mild soap, and a soft sponge, then dry it completely.

Washing removes that shipping protection while leaving the heat-treated surface and baked-on factory seasoning in place. That combination is why the pan is ready to cook with right away — it already has a working seasoned surface, not bare metal.

It isn't yet the deeply slick surface people swear by on a carbon steel or cast iron pan they've cooked on for years. That level takes time and repeated use to build. What the heat treatment and factory seasoning give you is a pan you can start cooking on immediately, without the raw-metal stage or the unpredictable color changes most new carbon steel goes through.

We recommend one or two rounds of seasoning before your first meal to give it a head start, though it isn't required — you can also just start cooking and let it build naturally.

About That Orange Residue

A light orange or brown residue can show up on a towel during the first few washes or uses. This is usually oxidation from the top layer of protective oil and beeswax — normal on a new pan, and not something to worry about. Wash, dry, and start using the pan; it typically goes away within the first few uses.

If it persists past that, wash again with soap, dry thoroughly, and apply a light seasoning layer.

Designed for Stability and Control

The pan's subtle concave base expands toward flat as it heats. This controlled movement helps it maintain contact with the cooktop and reduces the risk of long-term warping, especially on induction.

The hollow stainless steel handle reduces weight and slows heat transfer compared with a solid metal handle. It's riveted rather than welded, so the joint can move slightly as the metal expands and contracts with heat, instead of cracking the way a weld can under repeated thermal cycling. The handle can still get hot during extended stovetop or oven use, so use appropriate protection.

What Still Requires Care

Heat treatment and factory seasoning make carbon steel easier to start with, but they don't make it rustproof or remove the need for basic care.

Wash the pan by hand, dry it right away, and renew the seasoning when the surface needs it. Avoid prolonged cooking with tomatoes, wine, citrus, or vinegar, since their acidity can strip seasoning.
